美濃國山秀 MINONOKUNI YAMAHIDE

(Minonokuni is an ancient name of a region that is called Gifu Prefecture in Japan now and Yamahide is the store name of a personal knife shop which has been run for 3 generations up to now.)

The history of forged knives in 越前Echizen (Fukui Pref. Japan) for 700 years also tradition for 600 years of forging technics at 堺Sakai (Sakai City, Osaka) dwell in this blades. It is truly the supreme gift to the professional chefs from the professional knife maker.

The name of 美濃國Minonokuni was used between 702 - 1868 for a vast area in cluding Chuno (Seki, Mino & etc.) , Tohno (Tajimi, Nakatsugawa & etc.) & Seino (Gifu, Ohgaki & etc.) of the Tohsando. In this area,many of products such as Sake, Washi (papers), Potteries were made and the sword production is the most famous industry among them due to 5 great swordsmiths raised there.
Our company is an old store selling various knives & scissors in Seki City which is now well known in the world as a Knife City and this is 77th years after our foundation. In 2015, 和食Washoku (Japanese cuisine) has been registered at UNESCO and many of Japanese restaurants are opened allover the world due to good reputation of Japanese dishes. The higher popularity of Japanese dishes naturally made the demands on Japanese traditional style cooking knives which is the most suitable tools to prepare Washoku dishes and it seems that more demands for Japanese traditional style cooking knives become higher in the future.

However, the true picture of the Knife Industry in Japan at present is that all the manufacturers are suffered from the old ages of labourers and extreme shortage of young workers.

In order to keep this splendid technics of Japanese traditional style cooking knives for longer, such as for 10, 30, 50 years, we considered what we should do and came to a conclusion that it is not enough to sell the products made by others only and made a decision  to develop our own brand and started to manufacture 美濃國山秀Minonokuki Yamahide Brand knives together with deep cooperation with a couple of craftmen.

The knives of 美濃國山秀Minonokumi Yamahide Brand have not been made of any special steel or handle materials but they are made of just normal  steel & material used in the past for long years due to the reason that they are simply the most suitable steel & materials for 和食Washoku cooking. But we made our products with most careful attention on traditional way of 火造鍛造Forging, 研Grinding, 刃付Sharpening one by one by hand works with all of our heart. This traditional hand works by skillful craftmen without scampings make fine quality Japanese traditional style cooking knives, which nobody else can copy in other countries.

和食(刺身)

美濃國山秀Minonokuni Yamahide Brand Hochoes are being manufactured by hand works of craftmen in 堺Sakai (Osaka) & in 越前Echizen (Fukui) and there are 4 different classes of 松Matsu (Pine), 竹Take (Bamboo), 梅Ume (Plum) & 桜Sakura so each customer can find a piece of Hocho at least, which exactly satisfies his requirements. without fail.

The feature of the knives made in 堺 Sakai is splendid technics of fire forging and by using its speciality in maximam way, uncomparable level of high technics for sharpening follows. As a result of fine forging and ideal sharpening, the knives show the best performance of cutting and it is the feature of 堺Sakai Knives which have been created in long year history and no other knives can compete with Sakai knives, as far as the cutting performance is concerned.

They also insist to make the rear side sharpening in real flat so each customer can feel by himself that the rear side of the blade suck into the surface of whetstone, whenever he resharpens the knife.

On the other hand, 越前Echizen knives are made with soft iron & hard steel neatly piled up and forged by a skillful craftman in traditional way kept for long long years and he takes care of all the processes of production from forging to sharpening/edging. Differently from the knives stamped out by machines, 越前Echizen knives have strong tenacity and show very sharp cutting, in other words they are very tough and sharp. The blade is made thicker to the hands so due to the center of gravity close to hands, it is well balanced and can be handled easy.
