Matsu (Premium Collection)

Professional chefs know there's nothing better than Hitachi Aogami Steel when it comes to blade material. Renowned for its sharpness and exceptional edge retention, this premium steel has been chosen for the blades of Minonokuni Yamahide Knives' latest creation. The handle is made of durable and easy-to-grip Ho wood and is expertly finished in an octagonal shape with a water buffalo horn ferrule. To ensure a perfect fit, each knife is shipped with a custom wooden sheath. We're proud to recommend this knife to all professional chefs who demand the very best in blade sharpness and craftsmanship. As one of the upper class cooking knives in the Minonokuni Yamahide Knives collection, it's the perfect tool to elevate your culinary creations to the next level.

Take (Standard Collection)

When it comes to premium knife series, few can match the precision and craftsmanship of the Shirogami Steel collection. Made from a steel that is widely loved by professional chefs in Japan for its sharpness and ease of resharpening, these knives are a cut above the rest. Careful grinding and edging on the blade, done by skilled Sakai craftsmen, result in blades that are far superior to those of other companies. Once you've experienced the effortless precision of this collection, you'll never want to use another knife again. The handle is crafted from durable and lightweight Ho wood, while the ferrule is made from the finest water buffalo horn. As one of the upper-middle-class knives in the Minonokuni Yamahide collection, this series represents an exceptional balance of performance and affordability.

Ume (Essential Collection)

Crafted from premium High Carbon Steel, the blade of this knife is a favorite not only among professional chefs but also home cooks who appreciate its effortless resharpening. With its superior edge retention and exceptional sharpness, this knife will quickly become an indispensable tool in your kitchen. The handle, expertly crafted from beautiful and durable Ho Wood, provides a comfortable and secure grip, ensuring that you can slice and dice with ease and precision. Whether you're a seasoned professional or a passionate home cook, this knife is sure to elevate your culinary creations to new heights.

Echizen Sakura (Premium Collection)

Each knife in the Minonokuni Yamahide Hocho series is a work of art, crafted by a single skilled craftsman who oversees all the production processes, from fire-forging to grinding, sharpening, and edging. One unique feature of these forged knives is that the blade is made thicker near the handle and gradually tapers to a thinner blade tip. This meticulous attention to detail during the grinding, sharpening, and edging process results in knives that are not only easy to use but also incredibly sharp. When you use a knife from the FOOMON series, which displays a beautiful wavy pattern on the blade made from piled up steel materials, you'll understand why they're the most popular knives in the series. These knives represent the pinnacle of Minonokuni Yamahide Hocho's craftsmanship.
